鳳凰單叢產於廣東省潮州市鳳凰鎮鳳凰山。茶區瀕臨東海，氣候溫暖，雨水充足，茶樹均生長於海拔1000米以上的山區，土壤肥沃深厚，含有豐富的有機物質和多種微量元素，有利於茶樹的發育與形成茶多酚和芳香物質。
一般於午後開採，當晚加工，制茶均在夜間進行 經曬青、晾青、碰青、殺青、揉撚、烘焙等工序，歷時10小時製成成品茶。
鳳凰單樅的產銷歷史已有900餘年。1955、1982、1986年獲商業部全國優質名茶稱號，1986年在全國名茶評選會上被評為烏龍茶之首。
